The Essence of PINO 3000

PINO 3000 pomace brandy

Our three-country wine PINO 3000 has stood for over 15 years as an extraordinary vision: thinking Pinot Noir beyond borders – united by quality and a shared passion for wine. With the PINO 3000 pomace brandy, we now carry this philosophy forward.

Limited & Exclusive

The result is a distillate that reflects the philosophy of PINO 3000 – not as a by-product, but as a standalone promise of pleasure. Crafted in a very limited edition and is available exclusively at the hotel and at ice Q – intended to be savoured only there.

The three winemakers behind PINO 3000

As usual, the base of the pomace brandy is formed by the Pinot Noir from three wineries, each of which is renowned for this grape like few others:
  • Paul Achs (Austria)
  • St. Pauls (Italy)
  • Dr. Heger (Germany)

Three regions, three distinct signatures, united by a long-standing shared passion for Pinot Noir. The pomace from these wines already tells its own story of terroir, vintage, and character.

Masterfully refined

Eight years ago, we deliberately turned to one of the country’s most renowned distillers for refinement: Hans Reisetbauer from Axberg. With his experience, sensory finesse, and uncompromising commitment to quality, the pomace was transformed into a distillate of extraordinary precision. The 43.0% ABV showcases elegance and balance rather than sheer strength.

Five years of ageing. One clear goal.

The PINO 3000 pomace brandy matured for five years in an oak cask that previously held Pinot Noir. This deliberate choice adds depth, fine structure, and a subtle connection to its origins.

Throughout the years, the ageing process was closely monitored and guided by Hans Reisetbauer and the Central team. Tasted, assessed, and cared for – always with one clear goal in mind: balance and pleasure in every sip.

Precise. Elegant. Complex.

Even on the nose, the distinctive signature of the premium distillate is apparent: golden straw, delicate marzipan notes, and hints of citrus caramel open up a layered yet harmonious aromatic experience.
On the palate, the PINO 3000 pomace brandy is precise and elegant, with clear structure and subtle depth. A distillate that doesn’t demand, but invites—calm, balanced, and marked by the unmistakable signature of time.
