Meet Maria & Martin Grüner from goaskas
Cheese delicacies from the Ötztal mountains
At an altitude of almost 2,000 metres, Maria and Martin Grüner in Gurgl dedicate themselves to their great passion: mountain farming and the production of distinctive cheese specialities. In their own farm dairy, they process the milk from their mountain goats as well as raw cow’s milk from regional Tyrolean Grey cattle. The result is a range of cheeses with a distinctive sense of place, shaped by the mountains of the Ötztal Alps.
Michelin-starred chef Stefan Speiser visits goaskas in Gurgl
For our 5-star hotel Das Central, regionality begins where our ingredients have their roots. That’s why our Chef de Cuisine, Stefan Speiser, visited goaskas in Gurgl to experience first-hand the passion and craftsmanship behind their products. It’s this very quality and authenticity that we bring to our guests’ plates every day.

A love for farming
Since 2017, the Grüner family has been dedicated entirely to goat farming and the production of high-quality cheese specialities. The milk from their own mountain goats as well as regional Tyrolean Grey cattle is processed directly in their own farm dairy. The cheese owes its distinctive flavour to the diverse alpine meadows, fresh herbs and grasses, as well as the gentle processing methods.

Craftsmanship you can taste
At goaskas, every cheese is made with great care and attention to detail. After processing, the wheels are aged in the farm’s own rock cellar. The range includes creamy soft goat’s cheese, aromatic hard cheese and semi-hard cheese made from goat’s and raw cow’s milk.
From the farm dairy in Gurgl, the cheese also makes its way to Sölden’s Michelin-starred Ötztaler Stube. There, it becomes a delicious ambassador of its Ötztal origins as part of the “Die Marende” course.
Regionality that brings us together
goaskas stands for sustainable farming, short transport routes and products with a true sense of place. These values are also reflected in the cuisine at Das Central, where high-quality ingredients from the Ötztal form the foundation of many dishes.
